Acquiring the Taste is the second album of English progressive rock band Gentle Giant, released in 1971. It was the final album by the band to feature original drummer Martin Smith. The recording was made at the following studios. Advision Studios – (Engineers: Martin Rushent, Big A & Garybaldi). Studios, London – (Engineer: Bill Price). This was a departure from the blues and soul styles found on their self-titled debut.
The band's second album is a major advance on its first, featuring superior singing, playing, and songwriting, as well as a more unified sound, without sacrificing the element of surprise in the first record. Many of the melodies and even the riffs here (check out Gary Green's first guitar flourish on "Pantagruel's Nativity") have a pretty high haunt count, and all of the musicianship displays an elegance seldom heard even in progressive circles - but the record also, amazingly enough, rocks really hard as well
Setting out their stall before the record even started, the liner notes brazenly proclaimed a modus operandi of expanding the frontiers of contemporary popular music at the risk of being very unpopular, declaring that each song on the album should be unique, adventurous and fascinating, abandoning all preconceived thoughts of blatant commercialism. The LP’s open gatefold

The House, The Street, The Room.
Gentle Giant heavily incorporate classical music into their music, but the catch is: it doesn’t bore to tears. The base of Acquiring the Taste’s songs is very hard rock driven, complex bass lines and dirty blues guitar riffs, but laden with various instruments, a lot of them somewhat unexpected. The hard rock influence is also unexpected, through the opening track Pantagruel's Nativity, beginning with a peaceful Mellotron, wandering trumpet and flute, and quiet acoustic guitar as vocalist Phil Shulman projects a rather angelic voice. Through the elegant pseudo-classical moments on the album also come pure hard rock moments, similar to Jethro Tull’s Aqualung, hard rocking, but stylized with other influences. Wreck is the best example of this, the verses sound like a pub song with shouts of ohoowww and a powerful riff driving the song.
