NARRATOR: Dame Nellie Melba was Australia's first international opera star. The soprano was born here in Melbourne and made her first professional performance in 1887 in Brussels. She then went on to conquer the international opera scene, and particularly reigned supreme as prima donna at London's Covent Garden for many years. In 1977, Melba's grandaughter Lady Vestey, donated what was to become the foundation of our Dame Nellie Melba collection.

Melba toast is a dry, crisp and thinly sliced toast, often served with soup and salad or topped with either melted cheese or pâté. It is named after Dame Nellie Melba, the stage name of Australian opera singer Helen Porter Mitchell. Its name is thought to date from 1897, when the singer was very ill and it became a staple of her diet
